Lion's Mane Crabcakes

INGREDIENTS: - 8 oz Lion's Mane mushrooms - 1 egg - 1/2 cup Panko breadcrumbs - 1/4 cup onions (finely diced) - 1 Tbsp Mayonnaise - 1 Tsp Worcestershire sauce - 3/4 Tsp Old bay seasoning - 1 Tsp Dijon mustard - 1 Tbsp Parsley (finely chopped) - 1/4 Tsp Salt (to taste) - 1/4 Tsp black pepper - 2-3 Tbsp oil (to fry cakes) - 2 optional garnish - Lemon wedges QUICK TARTAR SAUCE: - 1/4 cup mayonnaise - 1 Tbsp dill pickle relish - 1/4 Tsp Old bay seasoning DIRECTIONS: 1- Hand shred lion's mane into small pieces. 2- In a large bowl, combine egg, onion, mayonnaise, dijon mustard, worcestershire sauce, old bay seasoning, parsley, salt, and pepper. 3- Add Lion's mane mushroom in the mix. 4- Mix in Panko breadcrumbs until fully incorporated. 5- Form mixture into equal size flat patties (approx, 1/2 inch thick). 6- Heat oil in med/high and cook pattied 2-3 mins each side or until golden brown. 7- Add optional garnish, squeeze some lemon
